Makes one cocktail.
*mint simple syrup: 1 cup distilled water, 1 cup sugar, 1⁄4 cup mint leaves. Combine ingredients over low heat, stirring constantly. Once sugar has dissolved, remove from heat and cool for at least 30 minutes before straining out mint leaves. Yields 1 1/2 cup
**whipped cream: 2 cups heavy whipping cream, 3 ounces agave syrup. Combine in a container and whisk together quickly until medium to stiff peaks form. Do not over beat. Keep refrigerated for up to 2 weeks.
