* For lavender honey simple syrup combine 2 cups honey, 2 cups hot water, 1 cup lavender flowers, and ½ cup mint leaves (or 4 tablespoons premade mint simple syrup) into a sauce pan and heat on low for 10 minutes, making sure not to boil, as the lavender will turn bitter. Remove completely from heat and let steep for 15 minutes. Strain, refrigerate and store for up to 2 weeks.
